Asian Non-Astringent Persimmons
"Non-astringent" means that these persimmons ripen when the fruit is a brilliant orange and the flesh is still firm. "Astringent" varieties are those that must completely soften before they are considered ripe, and if unripe, will present a bitter astringency when tasted. Non-astringent varieties will have a texture similar to an apple, and astringent varieties will have a jelly-like texture. Both are marvelously sweet!
