Winter Double Pink Flowering Ume Apricot - Prunus mume

Very fragrant, large ruffled, deep-pink flowers that bloom in late winter. At our nursery these bloom in February and are quite the spectacle in the otherwise dormant orchard. These early blooms make the Ume an excellent tree for pollinators. Self Fertile. Mature height 12'. Sometimes used as a bonsai specimen. Space 10 to 15' apart. Zone 5-7.

Japanese apricot or Ume fruits are eaten raw, candied, boiled, preserved in sugar, pickled in salt and dried, or made into a liqueur. The pulp is also used in the preparation of Ume-Bishio, a sour jam. Fruits preserved in salt and flavored with red Perilla are known as Umeboshi or salt plums are popular in Asian cuisine.
